Our honey is 100% Raw. This means that they are cold harvested and have not been heat-treated (pasteurised), so they still contain all of the naturally occurring good bacteria and enzymes. It does mean, however, that the honey will harden/ crystallise when exposed to cooler temperatures <15°C, this is inevitably in cooler climates, especially in winter.
While it may not be aesthetically pleasing, it is the natural form of honey. You may notice that we have written on the honey label a useful tip that states that you can stand the jar up in warm/ hot water in a bath, ewe recommend a temperature of around about 40°, to dissolve these crystals and have runny honey again!
